House Hunters

No... We are not buying a house unfortunately! But I have been watching a marathon of the hgtv show House Hunters (guilty pleasure of mine). And it has gotten me thinking about houses that I would buy and what my "must haves" so I have decided to share some of mine.

1. Big backyard
2. Big kitchen
3. Lots of cabinets and a good sized pantry.
4. Preferably not a lot of carpet.
5. Two car garage.
6. Four bedrooms.
7. Large laundry room/ mudroom.
8. Lots of living space.

Those are just a few and I have quite a list! We might just have to build it ourselves

Two years later

Dear sophi,

Your second birthday was last week. I can't believe how much you have grown! Your learn new things everyday and it is such a joy seeing you smile and laugh and play.

Mommy loves it when you come up randomly and ask for kisses or hugs and it always makes my day when you ask what movie I watching and come cuddle with me on the couch.

Daddy loves it when you sing with him in the car and dance with him. He loves taking you fishing and watching how excited you get when you catch fish. He is so excited to take you hunting and teach you about all the animals.

We love you so much baby girl. We are so excited to see you grow and become even more beautiful than you already are. We hope you stay sweet and loving and inquisitive. We can't begin to express how proud we are of you and how much we enjoy being your parents.

Hoppy Easter!!!

with all of the festivities and family time that comes with this holiday we still need to remember the reason that we have easter:


“He Is Risen”


“The clarion call of Christendom,” President Thomas S. Monson has declared, is that Jesus of Nazareth rose from the dead. “The reality of the Resurrection provides to one and all the peace that surpasses understanding” (see Philippians 4:7).1
In the following excerpts, President Monson shares his testimony of and gratitude for the Savior’s Resurrection and declares that because the Son conquered death, all of the Father’s children who come to earth will live again.

Life beyond Mortality

“I believe that none of us can conceive the full import of what Christ did for us in Gethsemane, but I am grateful every day of my life for His atoning sacrifice in our behalf.
“At the last moment, He could have turned back. But He did not. He passed beneath all things that He might save all things. In doing so, He gave us life beyond this mortal existence. He reclaimed us from the Fall of Adam.
“To the depths of my very soul, I am grateful to Him. He taught us how to live. He taught us how to die. He secured our salvation.”2

Dispelling the Darkness of Death

“In certain situations, as in great suffering and illness, death comes as an angel of mercy. But for the most part, we think of it as the enemy of human happiness.
“The darkness of death can ever be dispelled by the light of revealed truth. ‘I am the resurrection, and the life,’ spoke the Master. ‘He that believeth in me, though he were dead, yet shall he live: And whosoever liveth and believeth in me shall never die.’
“This reassurance—yes, even holy confirmation—of life beyond the grave could well provide the peace promised by the Savior when He assured His disciples: ‘Peace I leave with you, my peace I give unto you: not as the world giveth, give I unto you. Let not your heart be troubled, neither let it be afraid.’”3

He Is Not Here

“Our Savior lived again. The most glorious, comforting, and reassuring of all events of human history had taken place—the victory over death. The pain and agony of Gethsemane and Calvary had been wiped away. The salvation of mankind had been secured. The Fall of Adam had been reclaimed.

All Will Live Again

“With all my heart and the fervency of my soul, I lift up my voice in testimony as a special witness and declare that God does live. Jesus is His Son, the Only Begotten of the Father in the flesh. He is our Redeemer; He is our Mediator with the Father. He it was who died on the cross to atone for our sins. He became the firstfruits of the Resurrection. Because He died, all shall live again.”5

A Personal Witness

“I declare my personal witness that death has been conquered, victory over the tomb has been won. May the words made sacred by Him who fulfilled them become actual knowledge to all. Remember them. Cherish them. Honor them. He is risen.6

My round with natural healthcare

So, I have had this rather annoying cough.. This cough has been lingering in my house for a very long, long, long time. Well, my mom started to get worried that I had developed pneumonia and wanted me to go to the doctor. The only issue I had with this is that I don't currently have health insurance.... It's kinda a pesky thing since you need it usually... So I went and spent A LOT of money for the doctor to tell me that it was just a cough and give me a prescription for Z-PAK he said would clear it up.... Well one week later I'm STILL coughing. So my mom who is into these essential oils from DoTerra gives me this little humidifier and two oils called breath and on guard.
Breath is supposed to help with the coughing and plugged up nose and on guard is to disinfect germs and kill the virus or whatever it is... Well I ran this little humidifier for one night and the next day I felt amazing!! My cough had lessened and wasn't so deep and my lungs didn't ache! It was incredible!! So for about the same amount of money this little amount of oils ( Which was about three drops each) had already started working where this doctor couldn't really do anything!
Now I'm not discrediting doctors because they are great and they do know what they are talking about but there are some areas that modern medicine can't really fix and the same goes for the oils I'm sure! I didn't use it for a night and did notice a difference I was coughing a lot more than I was while using it!
For some one who can't spend ninety dollars to go to the doctor everytime she gets sick this is incredible!! And if the ancient peoples of the world used these methods with out modern technology and they worked then why can't we?? Especially since nowadays most prescriptions have so many other additives that they almost hinder more than they do good who wouldn't want to use a natural path that doesn't have side effects?
Well, that was my little rant and I think I should stop now but they really do work period!

Thank you! a million times over!

This has been a very long time coming, I probably should have said this a year ago or more but atleast i am saying it now!!
to my in laws: You have been AMAZING!!! with helping out when we found out about sophi and buying us a crib and being soo incredibly supportive!! Thank you for always being willing to take sophi while i go to work! it has been such a relief knowing that she is taken care of and that i can trust the babysitters to love and protect her.Thank you for feeding us EVERY sunday and letting us come over all the time to bug you and use your washing machine. I will never be able to repay you for your love and kindness and i am already in your debt probably for the rest of my life! Thank you for always having advice and encouragement and being amazing grandparents to sophi.

To my parents: I LOVE YOU!! i am so greatful for everything that you have done for me. By simply wanting another child and adopting me you have done more for me than I can repay. Thank you for putting up with my mood swings, bad grades, immature friends and so much more. MOM you are my best friend! i love hanging out with you and going to lunch and movies and of course watching glee and vampire diaries with you! DAD: thanks for always making me laugh and making sure i never forget that im your little girl for life! Thanks to both of you for being amazing parents and grandparents and letting me use your washer and dryer A LOT!!

To my beautiful sister: I have always looked up to you for everything and i have always wanted to be just like you! from laying with your toys to wearing your clothes to wishing i had your grades and everything else. but i especially wanted to thank you for always answering my questions about kids! and being a great role model!!

To my newest siblings: thanks for being the younger siblings i never had and thought i wanted! and giving me a place to be crazy and have fun!! i love you guys

To my big brother: thanks for really living up to the title! I am so glad that you came into my sisters life! your a good husband and daddy and i love that i can come to you for some brotherly advice anytime! I love you!

And lastly to my husband: we have been through a ton of stuff to get to where we are now. it has been a great adventure and i am so excited that i get to have more adventures everyday for the rest of eternity. you work so hard for our little family and you are an amazing daddy to sophi. thank you for loving me everyday and reminding me of that. thank you for listening to my worries and making me always feel better. you are my rock and i love that each and every night i get to crawl into bed and cuddle with you! heres to eternity babe!

I call it Mexican Chicken

I got this recipe from my sister yesterday!! And it's an easy crock pot meal! I am way excited to try it Because it sounds way yummy. You can serve this over rice or chips like my sister does or I can imagine you can just sprinkle cheese over it and use it as a dip!!

Chicken.....
1 8oz package of cream cheese
1 jar of salsa
1 can of corn drained
1 can of black beans not drained

Throw it all in the crockpot and I am cooking it on low for 8 hours because I have to work and I want the chicken to shred but you can eat it either shredded or whole!! And if you like spicy stuff use a hot salsa! I'm kinda a huge wimp when it comes to spicy so I used mild salsa! But that's the great thing about this recipe you can tailor it to your own wants!

Homemade yeast free cinnamon rolls!!

So I have started to be quite the homemaker recently! Thanks mostly to pinterest none of it is really me at all! But I have been making some crazy delicious and easy recipes and I have decided to share some of them. This cooking thing has become something that I really really enjoy! And I have always loved delicious food so here we go!

Filling:
• 3/4 cup of packed brown sugar
• 1/2 cup granulated sugar
• 1 tablespoon cinnamon
• 1/2 teaspoon salt
• 2 tablespoons of melted butter
• mix well with a fork and set aside.



Dough:
• 2 1/2 cups of flour
• 1/4 cup of sugar
• 1 1/2 teaspoons of baking powder
• 1/2 teaspoon of baking soda
• 1/2 teaspoon of salt
• 1 cup of butter milk
• 4 tablespoons of melted butter
• mix with spoon just until the dough comes together. If you mix to much the cinnamon rolls will be hard. Kneed the dough with hands and divide into two halves. Don't be afraid to use more flour to stop the sticking.

• roll out the dough into a rectangle just a bit bigger than a piece of paper. Fill with half of your cinnamon mixture and leave the sides of the dough clean about a 1/4 of an inch around all sides. Then roll up like a huge sausage, pinch the seams shut and cut your roll into eight pieces. Repeat with other half. Put your pieces in an 8 X 11 dish. Make sure to spray it with non stick spray!
• melt one more table spoon of butter and brush the tops of your cinnamon rolls.
• put in the oven( pre heated to 425) for 15 minutes or until golden brown on top.

Icing:
• 3 ounces of softened cream cheese
• 1 cup of powdered sugar
• 4 tablespoons of buttermilk
• mix together cream cheese and powdered sugar till smooth.
• add the buttermilk one table spoon at a time until creamy.
• pour over hot cinnamon rolls and smooth evenly.
• stick them in the freezer for five minutes and voila! Enjoy yummy deliciousness!!


Now I apologize for my horrible pictures! This was kind of a spur of the moment thing. And they didn't turn out as pretty as I wanted them but they taste delicious nonetheless!

Childlike once more!!

Today, my Sophi and I had macaroni and cheese for lunch! It was delicious and cheesy and we loved it! But all I could think about was how before she came bursting into my husband and my life I was wishing that I could be a little kid again and do kid things, eat kid things, and play like a kid again!! Well here it is folks the double wammie!! I get to do all of it again!!! Yay!! But now I mostly think about what it would be like to be able to do grown up things all the time!! What is this I thought I was doing what I wanted!! But I guess we are never fully satisfied until we achieve the opposite of what we want...

Now I sit here typing and daydreaming about what it would be like to go out to romantic dinners and spend a whole day in CLEAN clothes! No boogers, no remnants of previous meals, no questionable stains or spots you don't remember getting! Don't get me wrong being a mommy to my sweet Sophi is the best and I enjoy every minute even when I am tempted to rip my hair out from hearing "momma momma!!" thousands of times a day!

Potty Training

Sophi has decided that she is ready to potty train! this is exciting seeing as she is only 16 months old! She has been going very well on the potty for the past week unfortunately that didnt last because we have recently reached a stand still in her training...

            "Yesterday as i was getting Sophi undressed to go pee pee in her potty,
(she likes to be completely stark butt naked. She can't even wear socks!)  she sat down and looked like she was ready to go. she suddenly stands up and slams the lid down on her potty and climbs on top of it. i was sitting on the toilet watching her slightly amused, when she starts screaming "pee pee" and she starts peeing on me and on her potty and all over the floor! she starts giggling and runs naked into the front room....needless to say i will no longer be asking her if she wants to go pee pee on her potty...it will be rephrased to "go pee pee IN her potty."
